Covid has taken its toll on all of us over the past year and a half, and for James Martin, 49, being in the hospitality business has been nothing but stress. So much so, that he lost 2st in weight in just five weeks.

The chef opened up about the drastic change in his BMI in a recent column for The Daily Mail.
“I’ve lost 2st in five weeks due to the stress of opening and shutting restaurants four times because of Covid,” he shook his head.
“You do have sleepless nights as you worry about your team.
“I’m not great at everything, or anything to be honest,” he said.
“But Alan Sugar says it’s all about the team around you, like a good jigsaw puzzle, and I’ve got good people in that jigsaw.”
And a good team he has too, as the down-to-earth Yorkshireman and his colleagues wrote his latest book Butter, in 21 days during lockdown and photographed the dishes on the floor of his Hampshire home.
Impressively, the whole thing was completed in nine weeks from start to finish.
Butter has always been a favourite of the cook’s, admitting he’s spent his entire career using the natural ingredient “without compromise and without substitute”.
“Mainly because there isn’t one!” he chuckled.
“We shouldn’t take butter for granted.
“It’s such an essential part of our food lives right across the globe that it’s a wonder many more haven’t written books on it before.
“Butter is unique and natural, and we don’t have to kill an animal to produce it.”
This week, Jame left This Morning’s Phillip Schofield in disbelief after he used a whole block of butter in a dish he rustled up on Monday’s instalment.
The 59-year-old broadcaster looked mortified when he watched James add the entire block into a frying pan before adding in breaded chicken.
Wide-eyed and speechless, Phil couldn’t mask his disgust.
His co-star Holly Willoughby, who was equally as stunned by the amount of butter used, said: “I don’t want to know, I am going to look away!”
Despite Holly and Phil’s reaction, James gave assurances the meal would be delicious.
He explained: “You use flour, egg and breadcrumbs.
“All you do with the chicken is dip it in the egg so it’s coated in the egg and then you have to put it in the breadcrumbs so it’s coated on both sides.
“But the key to this is the cooking side, it needs a block of butter.”
He advised: “Make sure it’s half immersed in fat, be that oil or be that butter as it’s where you get the flavour from.
“Get the pan really hot and put the chicken straight in, from looking at it, you know it’s going to be good already.”
